Soft Dumplings

1 cup flour -- sifted
1 1/2 tsp. baking powder
1/2 tsp. salt 1 egg  well beaten
1/2 cup milk
1 tsp. butter  melted

Sift together dry ingredients. Combine egg, milk and butter; add gradually to flour, stirring until dough is smooth and no longer sticks to spoon. Break off pieces of dough about 1 in long and 1/2 in thick and drop into rapidly boiling water; boil covered, for 12 to 15 minutes. Enjoy!!

Pinched Noodles

1 cup Flour
1/2 tsp Salt
1 Egg beaten
2-4 Tbsp Water

METHOD Basic Steps: Mix → Knead → Rest → Roll out → Pinch →
Boil In a large bowl mix flour and salt well. Add the egg and 1-2 tbsp of the water and mix together to for a stiff yet pliable dough. Add more water if necessary. Knead till smooth and set aside to rest for at least 15 minutes. Cut into 6 equal portions and roll each portion into ropes the thickness of a finger. Lightly flour a baking sheet. Pinch little dime-sized portions of dough onto the baking sheet and spread evenly, tossing with a little of the flour to keep them from sticking. Repeat till all dough is used up. Bring a large quantity of salted water to a boil and add the dumplings. Cook for 5-7 minutes till tender. Drain, toss with a little melted butter or oil and serve.

Farina Dumplings (4 servings)

2 Tbsp. butter
2 eggs
Farina
1/4 tsp. salt

Mix the soft butter, salt and the 2 eggs well.
Add farina 1/4 cup at a time till you have a dumpling dough consistency.
Then add a little soup for moisture.
When the soup boils, cut the dumplings into the soup with a teaspoon.
When they come to the top, cook about 5 minutes more.
