Adis Beef Soup

Ingredients:

lb

beef stew meat

lb

pork, boneless cubed

1

large

red onion, minced

1

4 oz

butter (no substitutes), melted

cup

carrots - diced

1

cup

parsnip,

1

cup

celery chopped

1

cup

jalapeno pepper, minced

1

cup

tomatoes, diced

1

cup

portabella mushrooms, sliced

1

lb

potato peeled and diced

1

tsp

garlic clove, chopped

1

tsp

leeks, chopped

1

15-oz

rice, (Uncle Bens Boil in Bag)

Salt and pepper, to taste

       

Preparation:

Heat the oil in a large saucepan, add the beef and the pork in batches, cook until well browned all over - this will seal in the color and flavor.

Add all the ingredients, and cook, simmer, covered, for 45 minutes until leeks and the potatoes are soft.

Boil the rice separately than add to the soup.

Served with a cup om milk added to the soup.
