Cucumber Paprika Salad  (4-6 servings)

Ingredients:

3 fresh picked garden cucumbers from your vegetable garden
1/2 teaspoon salt, plain or iodized
Freshly ground pepper to taste
1 medium fresh garden onion from your vegetable garden
1 teaspoon granulated white sugar
2 tablespoons white vinegar
2 tablespoons water
3 cloves fresh crushed garlic from your vegetable garden
Fresh sweet Hungarian paprika

1 Heaping Tablespoon fresh sour cream

Preparation:

Peel the fresh garden cucumbers. Carefully slice them, paper thin. Sprinkle with salt and let stand for 15 minutes. Squeeze out the liquid from the cucumbers.

Peel and slice the onion very thin and mix with cucumbers. Add the salt, pepper, white vinegar, and water to cover the vegetables. You may adjust the vinegar, salt or sugar to a sweet - sour taste. Sprinkle the crushed garlic on top of the sliced cucumbers and onion. Sprinkle Hungarian paprika generously on top.

ptional add 1 Heaping Tablespoon fresh sour cream

Chill for 1/2 hour. The paprika cucumbers improve in taste as they marinate.  Enjoy!!
